What to Prefer: Dried or Fresh Pasta ?

The obvious answer would be Fresh, of course! But this is not necessary true. Fresh pasta is undoubtedly best when one is looking for tender pasta to serve with a simple topping of butter and Parmesan, or light cream or tomato sauce. However, dried pasta is not to be shunned when it is a good, imported Italian brand. Dried pasta has the advantage of being able to absorb water and swell in size while remaining al dente longer. This pasta provides a very good base for olive-oil based sauces which carry chunky meats and vegetables.
