Let's ask a few WHAT and WHY questions:
- What is gluten and Gluten-free diet?
- What doe's it mean gluten-free product in Canada?
- Is it safe to buy gluten-free pasta produced in a regular pasta factory?

Gluten is a protein complex found in wheat (including kamut and spelt), barley, rye and triticale. A gluten-free diet is the only medically accepted treatment for celiac disease. That is why a gluten-free diet is a diet that excludes foods containing gluten. The term gluten-free product generally is used to indicate a supposedly harmless level of gluten rather than a complete absence. Regulation for the label, gluten-free, varies widely by countries. Canada and the United States limited the use of "gluten-free" food products in less than 20 parts per million of gluten, as little as 0.002%. en.wikipedia.Gluten-free_diet

Our management team have been looking to produce gluten-free pasta a while ago. Really, who can make Italian style pasta (any kind of it) better than a company that's doing it for more then 20 years?

Then, we did a research what means to be a gluten-free producer in Canada. We found that we need to follow Health Canada Regulations and go to gluten-free certification, for which we already have Good Manufacturing Practices and HACCP Programs in place.
There are four gluten-free certification organizations in North America - no one of them required dedicated gluten-free facilities or dedicated gluten-free line used

Next, to avoid cross-contamination with gluten, we set up dedicated gluten-free days in the factory, the equipment (utensils, pasta machines, cold storage), and special cleaning procedures. We test gluten-free ingredients in house on daily basis and submit our gluten-free samples to third party for monthly testing.
And now we are proud to introduce you to our gluten-free pasta - enjoy it (retail stores list). Any of your comments will be appreciated on

Your sincerely, Giovanni John Zara
