Gluten is a protein complex found in wheat (including kamut and spelt), barley, rye and triticale. A gluten-free diet is the only medically accepted treatment for celiac disease. Our management team have been looking to produce gluten-free pasta a while ago. Really, who can make Italian style pasta (any kind of it) better than a company that's doing it for more then 20 years?

Then, we did a research what means to be a gluten-free producer in Canada. We found that we need to follow Health Canada Regulations and go to gluten-free certification, for which we already have Good Manufacturing Practices and HACCP Programs in place.
There are four gluten-free certification organizations in North America - no one of them required dedicated gluten-free facilities or dedicated gluten-free line used glutenfreedietitian.com

Next, to avoid cross-contamination with gluten, we set up dedicated gluten-free days in the factory, the equipment (utensils, pasta machines, cold storage), and special cleaning procedures. We test gluten-free ingredients in house on daily basis and submit our gluten-free samples to third party for monthly testing.
